Ingredients

2 oz
Cherry Gin
1 oz
Lime juice
0.5 oz
Simple syrup
Optional
Cherry bitters

Egg white

Sage leaves
1 oz
Prosecco or sparkling wine

Instructions

Muddle

Rim a coupe glass with sugar. Add sage and simple syrup to shaker cup and muddle.

Shake

Add Cherry Gin, lime juice, bitters and egg white to shaker. Shake vigorously for 20 seconds to chill and froth the whites.

Pour

Strain into coupe glass. Pour over the prosecco in a circular motion around the edge of the glass. Garnish with a sage leaf.
