To open a craft distillery in Alberta, David Farran had to defy prohibition law – but it wasn’t quite as gangster as it sounds. “There used to be a very onerous minimum production requirement regulation,” Farran explains. “So we applied and pushed the envelope a little bit and got permission, and the rules were changed as a result.”
