Mix It Up: 5 St Patrick’s Day Cocktails by Eau Claire Distillery

St. Paddy’s Day is just around the corner, so we’ve concocted some of our favourite cocktails inspired by the holiday. These irresistible cocktail recipes call for our Prickly Pear EquineOx, Single Malt Whisky, Three Point Vodka and Parlour Gin. Irish or not, you’ll be sure to love the excuse to try out some of these cocktails and have the craic (a great time)!

St. Paddy’s Toddy

Warm up with a cup of the St. Paddy’s Toddy, a fresh twist on the classic hot toddy that calls for our Single Malt Whisky and earl grey tea.

Ingredients:

  • 1oz Single Malt Whisky
  • 1 teaspoon of butter
  • 1oz apple cider
  • .5oz maple syrup
  • 1oz lemon juice
  • 1 earl grey tea bag
  • Cinnamon stick
  • Ground cloves
  • Lemon wheel

Instructions:

Steep the earl grey tea bag in a .5 oz of hot water in a mug for 30-45 seconds, then remove the tea bag and add the butter, stirring until melted. Combine all remaining ingredients into the mug, stir to combine. Dust with ground cloves and cinnamon, and garnish with a cinnamon stick and lemon wheel.

 

 

The Guinness Old Fashioned

Experience the luck of the Irish with our take on the classic Old Fashioned, using a Guinness simple syrup to bring in rich flavours from the Emerald Isle.

Ingredients:

  • 2oz Three Point Vodka
  • .5oz of Guinness simple syrup
    • 1/2 can of Guinness Beer
    • 1/4 cup sugar
  • Zest of an orange

Instructions:

Combine Three Point Vodka and Guinness simple syrup in a rocks glass. Garnish with the zest of an orange.

Guinness Simple Syrup: Bring Guinness to boil, then simmer on low heat, stirring in the sugar until dissolved. Simmer until mixture becomes a thicker consistency, dissolved to about half the amount. This could take 30 minutes, so we recommend making it a few hours or the day before your party. Let it cool and pour into a glass bottle to store.

 

The Lucky Gin Sour

Ingredients:

  • 1.5oz Parlour Gin
  • 1oz lemon juice
  • 1 egg white
  • 1oz simple syrup
  • 2 basil leaves
  • 2 mint leaves
  • 1 sage leaf
  • 4 slices cucumber
  • Extra herbs to garnish

Instructions:

Muddle basil, mint, sage and cucumber in base of shaker with Parlour Gin (let stand for a few minutes for extra flavor). Add other ingredients and shake with ice. Strain into coupe glass and garnish with a slice of cucumber and a sprig of your favourite herb.

 

Pot of Gold

Add a little flair to your St. Patty’s Gin & Tonic with some gold shimmer – here’s how!

Ingredients:

  • 2oz Parlour Gin
  • 4oz Eau Claire Soda Original Tonic
  • 1oz lemon juice
  • 1 teaspoon Gold Spirdust Cocktail Shimmer

Instructions:

Add Parlour Gin to a rocks glass with ice, following with tonic water and lemon juice, stirring well. Garnish with Gold Spirdust Cocktail Shimmer and serve.

 

The Shamrock Mojito

It may not be summer yet, but this fresh cocktail will get you thinking about warmer days to come, with fresh citrus and kiwi flavours!

Ingredients:

  • 5oz Prickly Pear EquineOx
  • 1 kiwi
  • 6 mint leaves
  • 1 tablespoon simple syrup
  • .5oz lemon juice
  • 1oz Eau Claire Soda Original Tonic
  • Garnish kiwi wheel

Instructions:

Muddle kiwi, mint, simple syrup and lemon juice. Transfer to shaker and add Prickly Pear EquineOx, a handful of ice and shake. Pour into a Collins glass with ice and top with Eau Claire Soda Original Tonic or soda water.
