When many people think of Whisky, they don’t often think of it as a refreshing summer drink, but there are actually a number of whisky cocktails you can make that are perfect for a hot summer evening. Now, hear us out. The Eau Claire team understands how nice a dram of whisky
can be as soon as the weather turns cold and wet, but that same whisky can be enjoyed just as much, if not more during the warmer months.

With such an outfitted whisky, dare we make cocktails out of it? The team at Eau Claire all agree, a whisky cocktail is a great way to beat the heat and enjoy a locally made, Alberta whisky. In the cocktail creations below, our aim was to celebrate and showcase the whisky rather than hiding it.
Rupert’s Whisky Smash
This delicious cocktail is the perfect mix of smooth whisky and tang from the lemon. Think of this yummy cocktail as a mojito mixed with a Moscow mule, all brought together with Rupert’s Whisky.
You’ll need:
2oz Rupert’s Whisky
3 Lemon wedges
0.75oz Simple Syrup
4 Mint Leaves
Muddle the lemon in a shaker. Add the remaining ingredients and ice and shake. Double-strain into a rocks glass over ice. Slap a mint sprig on the back of your hand to release the aromatics and use as a garnish.
Rupert’s Rosemary Sour
If you’re dreaming of camping or being in the wilderness, the Rupert’s Rosemary Sour is a great mix of spice and botanicals to transport you right to the Rocky Mountains.
To make:
2oz Rupert’s Whisky
1oz Lemon Juice
0.5 – 1oz Cinnamon Rosemary Simple Syrup
1 Egg White
Aromatic Bitters
Cubed ice
Dehydrated orange wheel and smoked rosemary sprig, to garnish
Put ice and all the ingredients into a shaker and shake hard for about 20 seconds to chill the liquid really well. Strain the mix into a glass filled with ice and garnish with dehydrated orange wheel and smoked rosemary sprig
Extras
Cinnamon Rosemary Simple Syrup
1 cup raw sugar
1/4 maple syrup
1 1/4 cup water
2 Rosemary sprigs
5-7 crushed cinnamon sticks (depending on size)
Combine water, sugar, and syrup in a pot at medium heat until sugar is melted. Add the Rosemary and Cinnamon and let simmer and steep on low heat for 30 minutes. Let cool and then refrigerate.
Rupert’s Ginger
The simplicity of this drink is what makes it so delicious. It’s all about the right ratio, we like the 2:1. Two ounces of whisky to 1 ounce of ginger ale. Some of the most iconic cocktails are just two ingredients, like the gin and tonic!
You’ll need:
2oz Rupert’s Whisky
1oz Ginger ale
Ice
Lemon or Lime, to garnish
Fill glass with ice, add whisky and ginger ale. Top with lemon or lime, enjoy!
