Master Distiller Caitlin Quinn has been wanting to do an Absinthe for years and finally we got the recipe perfected to bring out as a limited edition distillers series. Not green like your typical absinthe but post infused with hibiscus to give it a pink hue.
Our absinthe is a subtle approach to our fennel forward counterparts. These ingredients are carefully macerated and distilled in small batches to ensure that every bottle of our absinthe is of the highest quality. On the nose, expect sweet licorice and honey with a hint of mint. The flavour is licorice candy and wormwood bitterness that finishes with mint and a sweet honey roundness.
